Kabbalistic Reflections on the Seder Plate
"Vegetables are more dependent upon the farmer than fruit. Fruit grows on the same tree year after year; vegetables, once harvested, must be replanted. Vegetables are therefore associated with Hod - dependence and reliance on another."
"The Talmud informs us that Romaine lettuce is a typically used appetizer. The purpose of an appetizer is to whet the appetite and activate the digestive system so that the main course can be eaten and digested efficiently. The appetizer enables the person to bond properly with the food. It therefore alludes to the relationship of shared desire that we attained with G-d. This is characteristic of Yesod, the power of bonding."
"The Betzah (egg) is placed on the left side of the seder plate, opposite the Zeroa. This side represents the divine quality of Gevurah - strength, self containment, and judgement."

"This type of lettuce has bitter roots out of which grow pleasant tasting leaves. This represents the Chessed that follows Gevurah, the sweet that follows the bitter, which is characteristic of Tiferet."
